Description
The native Pecorino grape, was recovered in the mountainous hinterland thanks to its high quality that research and passion have brought to light again. Ciprea comes from a discovery: a tribute to Piceni’s culture and the use of shells as ornament.
SENSORY ANALYSIS
Bright color with greenish hues. Bouquet full of complexity in which predominate the scents of yellow frua and sage. Evolution is slow and progressive and oxygenation leads to emphasize mineral notes. It’s a full-bodied, persistent, elegant, characterized from fresh acidity and well balanced. Good aging potential.
VARIETY: Pecorino.
AGE OF THE VINEYARD: 26 years with east exposure and 200-250 meters of
altitude.
HARVEST: Hand picked in crates with selection of bunches during the first days of September.
WINEMAKING: A short maceration and fermentation in concrete tanks. A long aging on the dregs till the following sping.
ALCOHOL: 13,00% Vol
IDEAL TEMPERATURE: 10 ° C – 12 ° C
